I'm sure they're also using AI to build those infotainment systems these days, so I don't think the stability / usability somehow magically comes from the use of AI.

Probably it does come from the manufacturer not caring and just releasing the bare minimum, whereas hobby developers can, and want to, spend more time on getting things perfect.
