I am in a similar boat, I will launch a little tool (web page) for creating legally compliant invoices in Germany.

But I will go down the 3€/use road instead of the subscription one. I don't know if this is better, I just do what I would prefer as a customer.

There's a very nice solution called Cakedesk, made by a German developer.
